Information from the Statistics and Census Service (DSEC) indicated that there were 2,419 restaurants, eating & drinking places and cooked-food stalls in municipal markets operating in 2019, an increase of 76 year-on-year; total number of persons engaged rose by 411 to 34,034. Receipts of the industry grew by 4.1% year-on-year to MOP 12.24 billion, and expenditure rose by 3.4% to MOP 11.88 billion. Gross Surplus of the industry stood at MOP 377 million, a growth of 37.3% year-on-year; meanwhile, both Gross Surplus Ratio (3.1%) and Gross Surplus-Expenditure Ratio (3.2%) went up by 0.8 percentage points. Gross Value Added that measures the sectoral contribution to the economy increased by 8.7% year-on-year to MOP 4.67 billion, and Gross Fixed Capital Formation expanded by 9.8% to MOP 329 million.

Restaurants and eating & drinking places totalled 2,341, a rise of 76 year-on-year; and number of persons engaged grew by 412 to 33,885. Receipts of these establishments amounted to MOP 12.20 billion, up by 4.1% year-on-year. Expenditure rose by 3.4% year-on-year to MOP 11.86 billion, of which Compensation of Employees (36.2% of total) went up by 6.8% to MOP 4.30 billion and Purchase of Goods (36.0%) rose by 1.4% to MOP 4.27 billion; moreover, Operating Expenses grew by 2.0% to MOP 3.29 billion, with rent of establishment (MOP 1.58 billion) and electricity charges (MOP 400 million) rising by 7.3% and 1.7% respectively.

As the growth in receipts surpassed that in expenditure, Gross Surplus of restaurants and eating & drinking places surged by 40.3% year-on-year to MOP 360 million in 2019. Gross Surplus Ratio (2.9%) and Gross Surplus-Expenditure Ratio (3.0%) went up by 0.7 percentage points and 0.8 percentage points respectively. Gross Value Added reached MOP 4.65 billion, up by 8.8% year-on-year. Besides, Gross Fixed Capital Formation rose by 9.8% year-on-year to MOP 329 million, ascribable to an increase in renovation works as well as purchase of additional machinery, equipment and other assets.

Analysed by type of restaurants and eating & drinking places, Gross Surplus of Fast-food Restaurants (MOP 133 million) and Local-style Cafes, Congee & Noodle Shops (MOP 70.49 million) showed notable growth of 44.1% and 31.5% year-on-year respectively, while that of Chinese Restaurants (MOP 167 million) fell by 3.2%. Western Restaurants reported a deficit of MOP 0.51 million in 2019; however, it represented a significant improvement compared to 2018; meanwhile, Bars & Lounges showed a widening deficit of MOP 38.49 million.

There were 78 cooked-food stalls operating in municipal markets in 2019, the same as in 2018. Among the 149 persons engaged, only 6 were employees. Receipts of these stalls amounted to MOP 38.70 million, down by 9.1% year-on-year; expenditure decreased by 12.7% to MOP 20.98 million, with Purchase of Goods (MOP 16.80 million) comprising 80.1% of the total. Gross Surplus of these stalls dropped by 4.6% year-on-year to MOP 17.72 million, and Gross Value Added fell by 5.0% to MOP 19.07 million.

The Restaurants and Similar Establishments Survey covers licensed restaurants, eating & drinking places, and cooked-food stalls in municipal markets in 2019, while restaurants and similar facilities directly operated by hotels and gaming establishments, as well as street hawker stalls are excluded.
